Weekly Round Up July 10th
BOOKS:
For my birthday, I was gifted Easy Fancy Food by Colu Henry. I literally took it to the pool with me over the holiday weekend divulging it. Recipe shout out below but this book is a must for simple ingredients and fancy presentation. Just my kind of cookin’!
FOODIE:
As mentioned above, I got a new cookbook and the first recipe I made was a corn and shrimp mixture. I adapted a little for the grill but you can do over the stovetop easily. Let me break it down here.
Colu Henry’s A Summer Corn Salad with Shrimp Adapted:
We grilled, but can be stovetop or roasted —
Ingredients:
1lb jumbo shrimp
Salt & Pepper
1 Poblano Pepper thinly sliced
4 Ears of Corn
1 Zucchini
1/3 cup Fresh Basil Leaves
1/3 Green Onions thinly sliced
1 Lime
4 oz Feta Cheese *Optional
Simple Recipe:
Season shrimp with salt & pepper. If there’s extra time, marinate in lime juice 30 min. Grill or cook shrimp, poblano pepper, corn and zucchini.
Cut up, toss in a bowl, top with basil, onions, cheese and squeeze of fresh lime juice.
PERSONAL:
Over the holiday weekend I remembered how much I love my Yeti Cup. Morning, noon and night … coffee, sparkling water and chilled wine outside! Temps stay perfect for hours, mine has been heavily used for years with little wear - and it’s dishwasher friendly.

TRAVEL:
I’ve been back on the road this week to my brother’s wedding last Friday. I am a carry on gal and keeping my clean and dirty laundry separated is always a game of chess in a small roller bag. I love traveling with fabric laundry bags which makes sorting clothes and organizing things over several days easier … and makes unpacking a breeze!
